Taco Soup


Taco soup

2 pounds lean ground beef, browned and drained
16 oz. corn. (I used my home canned, but frozen will work, too)
1 can diced green chile, you use what you like, 4 or 7 oz.
1 package ranch dressing mix (in dried pouches, sold in salad dressing aisle, or make homemade mix)
1 can Ro-Tel diced tomatoes and green chiles
1 quart tomato sauce
1 quart spicy V-8 juice (mild if you prefer)
1 can black beans, drained and rinsed, again you choose the size of can, it depends on if you like beans!
1 package taco seasoning mix. I make my own, recipe follows.
1 cup water, this is optional, wait until everything is mixed together and if it needs to be a little thinner, go ahead and add it.  Cook on low for a couple hours.  If you have your ground beef browned ahead of time, put this in the slow cooker on low for the day, but go ahead and add the cup of water.

I garnish with avacado, onion, and cheese



Taco seasoning mix:

1 TBSP chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika, though I use a little more, using half smoked paprika
2 tsp cumin
1 tsp salt
1 tsp black pepper
