Sorbet

Simple syrup is just an equal amount of sugar to water. Some recipes will call for more, some less, use your own taste.

I know this is disappointing as far as a recipe goes, but to make sorbet, you simply add pureed and seeded fruit to your simple syrup. I slightly cook my strawberries (in this case), adding just a little water to the bottom of the pan, and using a potato masher or muddler or anything to squish the berries, mash and cook and stir. This is when I strain it in my mesh colander to eliminate the seeds. Then just add the puree to the simple syrup.

Keep adding to your tastes. I like my sorbet just a tad tart. Of course, I think to make this in to a daiquiri, you just add rum....right?  At least that's what I call it....
